Chia Seed Gel

Chia seeds come from a plant similar to sage. When the seeds come into contact with liquid, they swell and expand in size four to five times. The gel that results is clear and similar in texture to tapioca or gelatin. It's often used in vegan diets to give a jelly texture to dishes.
